I Wiki -ied “Potato Gratin” this morning just for the heck of it and one of the search results read out “Guiltless Gourmet”, which sounds like an article describing one of those fancy elaborate dinner-in-the-mansion-uphill scenes with flowing wine and long tables overloaded with mountains of food. Nobody to stop you from digging into seconds, thirds, fourths…..you get the point.
Well, turns out “Guiltless Gourmet” is actually a snack food brand. So much for imagination and the creative juices.
Anyway, today we have a French-inspired goodie. Dig into that cheese, and pay no heed to that post-meal-fat-guilt alert, it’s really not worth it.
Ingredients
25 g butter
1 onion, halved and thinly sliced
650 g floury potatoes, thinly sliced
85 g grated cheddar cheese
300 ml cream
100 m milk
Heat the butter in a frying pan, add the onion and cook over low heat for 5 minutes, or until it is soft and translucent. Preheat the oven to 160°C. Grease the base and sides of a deep1 L ovenproof dish. Layer in the potato slices with the onion and cheese(reserving some cheese for the top). Whisk together the cream and milk, and season with salt and freshly ground black pepper. Slowly pour over the potato, and finally sprinkle on the remaining cheese.
Bake for 50-60 minutes, or until golden brown and the potato is very soft. Leave to cool for 10 minutes before serving.
