I've always been one for food that combines extremes: add a bit of honey to your crispy chicken, serve a cold chocolate fudge cake with nice warm vanilla custard, that sort of stuff. It's all really fine and dandy until, well, someone tops off an absolutely delish looking cheesy pizza with pineapples, calls it 'Hawaiian' and sits it in front of you to stare at your shocked expression. Many will beg to differ, but yesiree, that mistake deserves a whole new post of its own.
Back to extremes, this concoction has been an all time favourite of my dad, and thanks to his endless demands for me to whip up this dessert for him weekend after weekend, it's managed to seep into my top 10 fast-and-yummo recipes list.
Ingredients
- 3 .5 cups peeled and sliced apples
- 1/2 cup raisins
- 1 cup all purpose flour
- ½ cup sugar
- ½ tsp baking powder
- ½ tsp salt
- 1 egg
- 1/3 cups butter or margarine, melted
- Ground cinnamon to taste
- Vanilla ice cream
Method
Preheat oven to 350°F. Combine apples and raisins in 8-inch square baking pan. Combine flour, sugar, baking powder and salt. Stir in egg with fork until crumbly. Sprinkle over apple mixture. Drizzle with butter and sprinkle with cinnamon. Bake 30 minutes or until lightly browned and apples are tender. Serve warm with vanilla ice cream. Refrigerate leftovers.
